Prebiotic Fiber - Tigernut To The Rescue

I just discovered TigerNut flour while searching for flour for those with nut allergies, specifically children. While its name gives you the impression it is a nut, it actually is a tuber which is a root vegetable.

It's prebiotic fiber resists digestion and becomes food for our bacteria in our gut or the popular term called the "microbiome". You can eat the dried tubers like nuts or ground up in your morning smoothie, it becomes gluten free, nut free and grain free flour to make all sorts of yummy things we used to make with wheat. Cacao TigerNut Pancakes
Makes up (6) 5 inch pancakes 
  • 3 Tablespoons Cacao powder - Dagaba is my favorite
  • 1 teaspoon of cinnamon (or to taste)
  • 4 grass fed eggs 
  • 1/3 cup coconut milk - Thai Kitchen 
  • 2 Teaspoons liquid Stevia - powdered Stevia has bitter aftertaste
  • 1/4 cup sparkling water (LaCroix) or water

You'll need two bowls. Mix flour, cacao and cinnamon is largest bowl. Add wet ingredients in smaller bowl and mix well. Add wet mixture slowly while mixing so it will incorporate better.

Heat up you pan. Pour first pancake to determine if you need to tweak. Weather and humidity can affect it. Double the recipe, cut into quarter, refrigerate and you have yummy grain free snacks.
